Abstrakti
This chapter emphasizes the need to ensure safety in the foods and feed that are derived from edible insects when marketed on a global scale. To this end, we hope that the hazards discussed in this chapter will help to direct the attention of potential startups and large-scale industrial producers to these safety considerations. It is equally important to consider those who are allergic to products made from edible insects along the entire value chain, from harvest, processing and packaging to transport, storage and disposal of waste, especially when mass production is envisaged. In addition, labelling and health claims will be relevant for insect and insect-based foods as the market grows in the near future.
